How does call routing work — does the AI always pick up, or only on missed calls?

Configurable per site. Three modes. (1) AI-first: every call goes straight to the AI agent — best for greenfield sites or after-hours-only deployment. (2) Human-first with AI fallback: incoming calls ring your existing landline for a configurable window (20 seconds default); if your team doesn't pick up in that window, OrderBrain takes the call. Smooth handoff, no "press 1 for AI" menu, same greeting either way. (3) Business-hours aware: same as human-first within your opening hours; outside hours OrderBrain answers directly, so an empty kitchen never rings for 20 seconds at 3am. You pick the mode during onboarding and change it any time.

How long does setup take?

Most pilots are taking calls within 3 days of signing. We provision the Twilio number, ingest your menu and allergen data, and your team logs into the operator dashboard. The most time-consuming part is verifying allergen data — we can't shortcut that and won't.

What does my team actually see?

A live operator dashboard for every site: incoming calls, captured orders, reservations, waitlist, allergen Q&A audit log, transcripts, and sentiment. Everything is searchable and exportable. Most pilots run it on a tablet by the pass or on the back-office screen.

Where does the order go after the call?

Straight into the OrderBrain dashboard, with optional outbound: a webhook for each captured order, an SMS confirmation to the caller, and an email summary to the operator. Push to anything that speaks HTTP if you need it elsewhere.

Is the data stored in the UK?

Yes. Production Azure resources run in UK South. Postgres, Key Vault, Container Apps, Blob Storage — all UK. Call audio and transcripts are retained for the configured window (default 90 days) then deleted.
